Hello and welcome to VegfulLife!
Hi! I am Kristy. I live in Vancouver, Washington with my husband, Steve, three companion cats and one guinea pig. Steve and I became vegetarians in April 2012. He then became a vegan in January 2013. I started to transition to being a vegan as well, but it took me a little longer to make the full transition. I have been vegan since 2014. During that time, we opened ourselves to new experiences and new ways of thinking. I found that I could still cook and eat foods that I love, and became very creative in the kitchen! After becoming vegetarians and then vegans, we both lost a great deal of weight. I’ve have lost over 100 pounds so far and Steve has lost 200 pounds. He also became a marathon runner!
In April 2016, I became certified as a Vegan Lifestyle Coach and Educator through the Main Street Vegan Academy. It was an incredible experience to spend 6 intensive days in New York City with 16 other amazing individuals. We all came to veganism through our own paths and we all have our own stories. Yet, what we all have in common is the desire to inspire others on their vegan paths. Check out the Coaching page for more information about vegan coaching sessions.
I completed a certification for Professional Plant-Based Culinary Certification through Rouxbe Cooking School. It was a comprehensive culinary certification course that taught not only the basics in plant-based cooking, but also provided us with the tools to develop and create delectable and healthy plant-based and vegan recipes.
I am also earning a Master of Arts degree in Humane Education through the Institute for Humane Education. Upon entering the program, I discovered how the environment is degraded by what we eat, how we grow our food, and how we consume products. I also learned about human rights and how people are treated and denied access to basic human rights around the world. It amazed me to see how so many things in my life are so connected, yet I was unmindful of them for so many years.
