When I first thought about starting this blog, I wanted it to be a vegan cooking blog. I became a vegetarian in 2012 and a vegan in 2014. I have always loved to cook, but I was also always a “meat and potatoes girl." When I became a vegetarian, I basically had to learn what vegetables were….beyond corn, peas, or green beans. I had to learn about tofu, tempeh, and seitan (and yes, I did pronounce seitan incorrectly the first few times). Now, I love to cook and bake with an endless number of ingredients! I became creative in the kitchen and started building my own recipes. Because I love to cook and talk about food, I will be posting recipes on a regular basis. However, this is not a cooking blog.
Over the past few years, I've learned so much about how our environment, our food, our thoughts, and our treatment of others are interconnected through many different variables. So to me, a VegfulLife means taking the information I have learned and applying it to my everyday interactions to create a plentiful and abundant life. I am not perfect, but I am more mindful of my choices. Through this blog, I will not only share the information I have learned, but the ways it can be applied to your own life. You don’t have to be a vegetarian or vegan to enjoy this site. It is for everyone!
